POTATO CAKE | |
5 lbs. potatoes, peeled & grated 1 med. onion, grated 5 lg. eggs 1 lb. diced bacon 1/4 lb. butter 1 lg. can evaporated milk 1 tbsp. salt 1/4 tsp. pepper Have all ingredients ready to mix in so potatoes don't turn dark. Fry bacon, do not drain. Add onion and saute slightly. Melt butter. Beat eggs and milk until light. Do not drain potatoes. Mix it all together. Add the salt and pepper. Pour in greased pans. Bake at 375 degrees for 1 to 1 1/2 hours or until done and brown. Eat it right from oven or reheat. |
