CINNAMON CUCUMBER RINGS 
DAY 1:

Peel and cut into rings 2 gallons cucumbers. Put in 8 1/2 quarts water and 2 cups pickling lime. Mix well and pour on cucumbers. Let stand 24 hours.

DAY 2:

Drain lime water and wash in 4 or 5 times with water until well washed and soak in cold water for 3 or 4 hours. Then drain well. Slowly simmer 3 hours in clear water with 1 teaspoon alum and 1 oz. red food coloring. Then drain well and add: 3 c. water 13 c. sugar 8 sticks cinnamon 10 oz. cinnamon candy

Let stand overnight.

DAY 3:

Drain all the juice and bring to boil and pour over pickles; let stand overnight.

DAY 4:

Bring to boil juice and cucumbers and put in jars and seal. Makes 12 pints.
