GINGERBREAD MUFFINS 
1 c. unbleached flour
3/4 c. whole wheat flour
1/4 c. sugar
1 tsp. baking soda
1/4 tsp. salt
1 tsp. ginger
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. allspice
1/4 tsp. nutmeg
3/4 c. buttermilk
1/3 c. olive oil
1 egg & 1 egg white
1/4 c. unsulphered molasses

Preheat oven to 400 degrees. Combine flours, sugar, baking soda, salt and spices in a large bowl. Combine buttermilk, oil, egg, egg white and molasses. Add flour mixture to buttermilk mixture. Do not overmix. Pour into muffin pans and bake 15 minutes. Makes 12 muffins. 177 calories per muffin. 9 sat-fat calories per muffin (or larger).
