2 1/4 lbs. fresh sweet potatoes
6 tbsp. butter
3 eggs, beaten
1/2 c. sugar
1/2 c. chopped pecans
1/2 c. coconut
1/2 c. orange juice
1/2 tsp. salt
1/2 tsp. vanilla

Bake potatoes at 350 degrees until done. Mash the potatoes and add all other ingredients. Place in a 1 1/2 quart casserole. Bake, uncovered in a 350 degree oven for 30 minutes. Marshmallows may be put on top before baking.
