1/2 c. wagon wheel pasta (cooked and drained) 1/2 lb. ground beef 1 sm. onion (chopped) 1 clove garlic 1 (8 oz.) can red kidney beans 1 (7 3/4 oz.) can tomato soup 1/2 to 1 tsp. chili powder 1/4 tsp. salt 1/2 c. crushed tortilla chips 1/2 c. shredded cheddar cheese In a 10 inch skillet cook meat, onion and garlic. Drain. Stir in undrained kidney beans, tomato soup, chili powder, and salt. Mix well with meat. Stir in cooked pasta. Transfer mixture to a 1 quart casserole dish or 4 8 oz.individual casseroles. Bake, uncovered in a 350 degree oven about 30 minutes for 1 quart casserole and 12 to 15 minutes for individual casseroles. Top with crushed chips and cheese and bake for 3 minutes more or until cheese melts. Serves 4. |
