CHICKEN CHILI 
2 tbsp. olive oil
1 lb. boneless chicken, cut into bite-size pieces
1 lg. onion, chopped
2 lg. cloves garlic, minced
1 (28 oz.) can tomatoes, chopped with liquid
1 (16 oz.) can pinto beans with liquid
2 (4 oz.) cans diced green chilies
1 (16 oz.) can kidney beans with liquid
2 tbsp. chili powder
1 tsp. oregano
1 tsp. cumin

Heat oil in large saucepan. Add chicken, onion and garlic. Cook 2-3 minutes. Add remaining ingredients. Simmer, uncovered 30 minutes. Add salt and pepper to taste. Serve with sour cream and shredded cheese, if desired. Makes 6-8 servings.
