SUPER ONION SALAD 
1 med. head broccoli, cut in florets
1 med. size red onion, thinly sliced
1 c. cherry tomatoes, cut in halves
Savory Vinaigrette Dressing (see recipe)
1/2 c. broken walnuts

Steam broccoli 3 minutes. Drain. Cool to room temperature. Combine first 3 ingredients with 2/3 vinaigrette dressing. Cover and refrigerate 3-4 hours stirring occasionally. Before serving add feta cheese and walnuts.

SAVORY VINAIGRETTE DRESSING:

3/4 c. vegetable oil
1/4 c. white wine vinegar
1 tbsp. prepared mustard
2 cloves garlic, finely minced
3/4 tsp. dried leaf thyme, crumbled
1/2 tsp. dried leaf oregano, crumbled
1/2 tsp. salt
1/2 tsp. dried leaf basil, crumbled
1/8 tsp. pepper

Mix well. Serves 4-6.
