CRAB CAKES 
2 peppers, chopped fine
1 stalk celery, chopped fine
1 can fresh crab meat
4 hard boiled eggs
Bread crumbs
3 raw eggs
2 tbsp. parsley
2 lg. onions, minced
Salt & pepper

SAUCE:

2 tbsp. butter
1 c. milk
1 tbsp. flour

Begin by making the sauce in a small saucepan. Combine the butter and the milk; allowing the butter to melt. Mix the flour with a little water, add that to the butter and milk. Mix this until it becomes thick.

In a mixing bowl combine the other ingredients. Pour the sauce in and form the crab cakes. Dip the cakes into the bread crumbs. Let stand for approximately 10 minutes and then fry.
