CRANBERRY PUMPKIN BREAD 
2 eggs, beaten
2 c. sugar
1/2 c. vegetable oil
1 c. pumpkin
2 1/4 c. flour
1 tbsp. pumpkin spice
(Or I use cinnamon)
1 tsp. baking soda
1/2 tsp. salt
1 c. fresh cranberries, chopped

Combine eggs, sugar, oil and pumpkin. Mix well. Combine flour, pumpkin spice, soda and salt in a large bowl. Pour pumpkin mix into dry ingredients. Stir until dry ingredients are moistened. Stir in cranberries. Spoon batter into 2 greased and floured 8 x 3 3/4 x 2 1/2 inch bread pans. Bake in 350 degree oven for 1 hour. Test with toothpick in middle of loaf.
