TEXAS PEACH COBBLER 
1 c. flour
3/4 c. sugar
2 tsp. baking powder
8 tbsp. unsalted butter
1 c. milk
6 sm. or med. peaches, sliced
1 tsp. cinnamon
Vanilla ice cream

Heat oven to 350 degrees. Combine flour, 1/2 cup sugar and baking powder. Add 4 tablespoons of the butter. Cut butter and flour together until mixture resembles coarse crumbs. Stir in milk until batter is smooth. Place 4 tablespoons butter in 9 x 9 inch square or 10 inch round pan and melt in oven. Swirl butter over bottom and sides of pan. Pour batter into pan. Arrange peach slices in rows (square pan) or concentric circles if round pan. Combine 1/4 cup sugar and the cinnamon. Sprinkle over peaches. Bake for 45 minutes or until golden brown. Serve warm with the vanilla ice cream (or with whipped cream).
