CORN MEAL MUFFINS 
1 c. corn meal
1 c. flour
1/2 tsp. salt
1 tbsp. sugar
4 tsp. baking powder
1 c. milk
2 lg. eggs, beaten
2 tbsp. melted shortening or salad oil

Mix and sift dry ingredients into mixing bowl. Add milk and mix. Add eggs and melted shortening or oil. Pour into well-greased and heated muffin tins and bake in 400-425 degree oven until brown. Butter and serve.
