FRESH ORANGE LAYER CAKE 
2 1/4 c. sifted cake flour
1 1/2 c. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1/2 c. shortening
Grated rind of 1 orange
2/3 c. milk or water
1/3 c. unstrained fresh orange juice
2 eggs

Sift dry ingredients together in large mixing bowl. Add the shortening, orange rind and mix well. Mix the juice with the milk or water and add 2/3 of it to the cake. Beat 2 minutes. Add the eggs and the rest of the juice mixture. Beat well another 2 minutes. Bake in greased and floured 9 inch layer cake pans at 350 degrees for 30 minutes. Remove from pans and let cool on cake racks.
