FRIED CATFISH 
2 lb. catfish (approximately 6 servings)
1/2 c. white or yellow cornmeal
1/2 c. all-purpose flour
1 tsp. salt (optional)
1/4 tsp. pepper
1/4 tsp. vegetable oil

If fish fillets are large, cut into serving-size pieces. Combine cornmeal, flour, salt and pepper. Coat fish in cornmeal mixture. Heat oil in skillet until hot. Fry fish over medium heat until golden brown on both sides, turning carefully.
