SPICY PUMPKIN BUTTER 
1 qt. pumpkin
3 c. sugar
2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. allspice
3/4 c. lemon juice
1 1/4 c. water

In large kettle, mix pumpkin puree and sugar. On medium heat, stir until sugar dissolves. Add spices. Add 1 1/4 cups water and lemon juice. Cook, stirring constantly until mixture boils. Cook 30 to 40 minutes, stirring occasionally until mixture thickens. Put in jars and seal. Process 10 minutes in boiling water. Makes 6 (8 ounce) jars.
