SPINACH CHEESE SQUARES 
2 tsp. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
Few dashes pepper
1 tsp. baking powder
1 lb. Monterey Jack cheese
2 (10 oz.) pkg. frozen spinach, chopped
1 tsp. minced onion

Thaw and drain well, chopped spinach. Grate cheese. In 9 x 13 inch pan, melt butter in 350 degree oven.

In large bowl beat eggs: Add flour, milk and seasonings; mix well. Add cheese, spinach and onion. Pour in pan and bake 35 minutes. Cool 45 minutes to set. Cut in bite-size pieces.

To freeze, place individual pieces on a cookie sheet, freeze and then transfer to a plastic bag when firm. Reheat 12 minutes at 325 degrees.
