2 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1/3 c. grated Parmesan cheese
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Grease a 10 inch pie plate. Sprinkle zucchini, tomato, onion, and cheese in plate. Beat remaining ingredients until smooth, 1 minute with beater. Pour into pie plate. Bake at 400 degrees for 40 minutes. Cool 5 minutes.

Makes 6 servings.
