MEXICAN CHICKEN 
1 fryer or 1 pkg. chicken breasts
1 sm. onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes, diced
1/2 lb. bag Doritos
1 lb. Velveeta cheese, grated

Boil and debone chicken. Combine onion, soups and Rotel tomatoes. Pour Doritos in a greased 13 x 9 inch pan. Layer chicken over Doritos and pour soup mixture over chicken. Sprinkle cheese over top. Cover with foil. Bake at 350 degrees for 1 hour.
