SCALLOPED CORN CASSEROLE 
2 tbsp. butter
1 c. milk
2 eggs, beaten
1 (1 lb.) can whole kernel corn, drained
1 can peeled green chili peppers (seeds removed)
Buttered cracker crumbs
2 tbsp. flour
1/2 tsp. salt
1 c. soft bread crumbs
1/2 lb. Cheddar cheese

Melt butter and stir in flour. Add milk and cook, stirring constantly. Add salt, eggs, bread and corn. Put 1/3 of mixture in bottom of casserole over this layer. Add peppers and cheese. Repeat ending with corn mixture on top. Top with buttered cracker crumbs. Bake 15 minutes at 350 degrees. Serves 6.
