SKILLET SAUSAGE AND RICE 
1 lb. seasoned sausage, made into patties
1/2 c. thinly sliced onion
2 c. cooked tomato
2 tbsp. chopped green peppers
1/4 c. diced celery
3/4 c. uncooked rice
Pepper to taste
1 tsp. salt

Brown patties on both sides and remove to plate. Pour off fat except 2 or 3 tablespoons. Fry onion, celery and peppers until brown. Add tomatoes, rice and salt and stir. Place sausage on top. Bring to a boil. Lower heat to simmer. Cover tightly and cook 20 minutes approximately. Garnish with parsley or pepper strips, if desired.
