HOLIDAY CHOCOLATE BUTTER COOKIES 
1/2 c. sugar
3/4 c. butter, softened
1 egg yolk
1 tsp. almond extract
1-1/2 c. all-purpose flour
1/4 c. unsweetened cocoa

Heat oven to 375 degrees F.

In large mixer bowl combine sugar, butter, egg yolk, and almond extract. Beat at medium speed until mixture is light and fluffy, 2-3 minutes, scraping bowl often. Continue beating gradually adding flour and cocoa until well mixed, 2-3 minutes.

Shape rounded teaspoonsful of dough into 1 inch balls, or shape as desired. Place 1 inch apart on ungreased cookie sheets.
