HONEY-LEMON COOKIES 
1/3 c. sugar
1/3 c. shortening
2/3 c. honey
1 egg
1 tsp. lemon extract
2 3/4 c. flour
1 tsp. baking soda
1 tsp. salt

Heat oven to 375 degrees. Mix sugar, shortening, honey, egg and lemon extract. Stir in remaining ingredients. Roll 1/4 inch thick. Cut into desired shapes with cookie cutters. Place about 1 inch apart on lightly greased cookie sheet. Bake until no indentation remains when touched, 7 to 8 minutes; cool. If using self-rising flour, decrease baking soda to 1/4 teaspoon and omit salt.
