BREAD AND BUTTER PICKLES 
4 med. cucumbers, thinly sliced
2 tbsp. dehydrated onion flakes
1 green pepper, chopped
1 clove garlic, crushed
2 tbsp. salt
3/4 c. cracked ice
1/2 c. cider vinegar
Artificial sweetener to equal 2 tbsp. sugar
1/4 tsp. turmeric
1/2 tsp. mustard seed
1/2 tsp. celery seed

Combine cucumber, onion flakes, green pepper, and garlic; mix well. Sprinkle cucumber mixture with salt and cracked ice. Let stand at room temperature for 3 hours. Drain well. Combine remaining ingredients. Pour over cucumbers in saucepan; heat to a boil and simmer 3 minutes. Cool. Keep refrigerated. Makes about 8 servings.

Note: Zucchini may used in combination with or in place of cucumber.
