CAULIFLOWER WITH CHEESE SAUCE 
1 med. cauliflower
2 c. milk
4 tbsp. butter
4 tbsp. flour
1 1/2 c. cheese, grated
1/2 tsp. salt

Cook cauliflower upside down in boiling, salted water until tender. Drain. Make a white sauce of the butter, flour, and milk. When thickened, add grated cheese and salt. Place drained cauliflower on platter and pour the cheese sauce over it. Yields 6-8 servings.
