CAULIFLOWER WITH CHEESE SAUCE 
1 med. head cauliflower
2 tbsp. butter
2 tbsp. all purpose flour
Dash of pepper (white)
1 c. milk
1 c. shredded sharp American cheese (4 oz.)
1 tsp. prepared mustard
1 tbsp. snipped parsley

Break cauliflower into flowerets and cook in a small amount of salt water for 10 to 15 minutes, covered. Drain and keep warm.

In another pan melt butter. Blend flour, pepper, 1/4 teaspoon salt into butter. Add milk, all at once. Cook, stirring constantly until thickened and bubbly. Stir in cheese and mustard. Heat until cheese melts. Pour over cauliflower. Sprinkle with parsley.
