CAULIFLOWER WITH CHEESE SAUCE | |
1 tsp. salt, divided 1 head cauliflower, broken into flowerets 2 tbsp. butter 2 tbsp. all-purpose flour Dash of pepper Dash of paprika (optional) 1 c. milk 1 c. shredded Cheddar cheese Bring 1 inch of water to a boil with 1/2 teaspoon salt in a medium saucepan; add cauliflower. Cover and cook 8-10 minutes, until crisp tender. Drain and keep warm. Melt butter in small saucepan over medium heat; add flour, 1/2 teaspoon salt, pepper and paprika, if desired. Cook and stir 3 minutes or until bubbly. Gradually stir in milk; cook, stirring constantly, until smooth and thickened. Add cheese and stir until melted. Arrange cauliflower on platter and spoon cheeses sauce over top. Makes 6-8 servings. |
