PEANUT BUTTER AND JELLY MUFFINS 
2 c. flour
1/4 c. granulated sugar
1 tbsp. baking powder
2 lg. eggs
2/3 c. creamy peanut butter
3/4 c. milk
1/3 c. grape jelly

Heat oven to 375 degrees. Grease 12 muffin cups with paper or foil baking cups. Stir flour, sugar and baking powder together in a large bowl. Set aside. Place eggs and peanut butter in a small bowl and beat until smooth; gradually add milk and stir until smooth.

Pour peanut butter mixture over dry ingredients; stir just to moisten. Spoon about 2 tablespoons batter into muffin cups. Top with a teaspoon of jelly; spoon 1 1/2 tablespoons of batter on top of each muffin. Bake 20 minutes or until lightly browned. Makes 12 muffins.
