POTATO PUFF 
15 med. size potatoes, cooked and mashed
1/2 stick butter (1/4 c.)
1 c. sour cream/low-fat yogurt
2 c. sm. curd cottage cheese
1 sm. onion, finely diced

Mix hot mashed potatoes with softened butter, sour cream, cottage cheese and onions. Put mixture into casserole and let stand overnight to blend. Bake for 1 hour, covered, at 350 degrees. Serves 12.

Note: Casserole can stand for an hour before baking to blend flavors and be just as successful.
