PUMPKIN ROLL | |
2/3 c. pumpkin 1 tsp. baking soda 1/2 tsp. cinnamon 3/4 c. flour 3 eggs 1 c. sugar Mix all of the above and spread on a 10 x 15 inch jelly roll sheet. (I used a cookie sheet) teflon coated works best which has been greased and lined with waxed paper. Grease the top of the waxed paper also. After spreading the mixture on cookie sheet, bake at 350 degrees for 15 minutes. Turn out on a flat towel sift confectioners' sugar on top while hot and roll immediately. Unroll, spread with filling. Reroll and wrap in foil and place in the refrigerator to cool. FILLING: 2 tbsp. butter 8 oz. cream cheese, soft 3/4 tsp. vanilla 1 c. 10X sugar 1 c. pecans, minced & chopped Mix all ingredients well. |
