MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white syrup
Peanuts and or coconut
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

Cook sugar and syrup on high for 6 minutes. Add nuts or coconut or leave plain. Cook 1 more minute. Add butter and vanilla. Cook 1 more minute. Remove from oven and add baking soda. Stir once, let it foam (with wooden spoon), pour while foaming onto a buttered cookie sheet.

NOTE: Use large bowl because of boiling syrup mixture. Large bowl prevents boiling over.

Since microwave ovens vary in power, you may need to adjust your cooking time.
