SAUTEED LIVER 
1 c. sliced onion
2 tbsp. shortening
4 slices beef liver, cut 3/8" thick (about 1 lb.)
2 tsp. lemon juice
1 tsp. Worcestershire sauce

In skillet cook onion in hot shortening until tender, but not brown; remove from skillet. Add liver; sprinkle with some salt and pepper. Cook 3 minutes at medium heat; turn. Return onion to skillet; cook 3 minutes more. Transfer liver and onion to serving platter. Blend lemon juice and Worcestershire sauce into pan drippings; pour over liver. Makes 4 servings.
