2 1/2 c. pancake mix Sugar 3 tbsp. brown sugar 1 tsp. nutmeg 1 egg, well beaten 1/2 c. milk 3 tbsp. butter, melted Oil for deep frying 1 tsp. cinnamon Combine pancake mix, 3 tablespoons sugar, brown sugar and 3/4 teaspoon nutmeg into a bowl. Add egg, milk and butter; mix well. Turn out onto lightly floured surface. Knead gently until dough is just combined. Roll to 1/3 inch thickness. Cut into 6 x 1/2 inch strips. Shape into loops gently. Press ends together lightly. Fry in 375 degree hot deep fat for 1 minute on each side. Drain. Combine 1 cup sugar, cinnamon and 1/4 teaspoon nutmeg. Roll loops in cinnamon-sugar. Yield: 2 1/2 dozen. |
