LO CAL CHICKEN CORDON BLEU | |
2 skinned, boneless chicken breasts, halved & pounded to 1/4" thickness 2 slices Mozzarella cheese 2 slices ham (honey ham works well) 1 lg. egg white 1 tbsp. water 1/2 c. spiced bread crumbs 1 tbsp. butter 1. Whisk egg white and water together. Place bread crumbs on a plate. Dip one side of chicken breast into egg white and then into bread crumbs. 2. Melt butter in skillet and add coated chicken breasts. Brown one side only. 3. Roll cheese inside of ham slice. Place in center of chicken breast, like a jelly roll. Secure with toothpicks. 4. Bake in a preheated 350 degree oven for approximately a half hour. Do not cover while coating. |
