CHICKEN CORDON BLEU 
12 boneless chicken breasts, skinned
12 slices boiled ham
12 slices Mozzarella cheese
2 eggs, slightly beaten
1 c. bread crumbs
Salt, olive oil
Juice of 1 lemon - reserve 1 tsp. for sauce

One at a time, salt chicken breasts, then put 1 slice of ham and 1 slice of cheese on top and roll, sealing with toothpicks. Dip in egg and then roll in bread crumbs. Brown lightly in olive oil. Place in a baking pan and sprinkle with lemon juice.

SAUCE:

1 clove garlic, minced
1 med. onion, sliced
1 can beef consomme
3/4 c. white wine
1 tsp. lemon juice
1/2 pt. heavy cream
1 tbsp. butter

Saute onion and garlic in butter, then add rest of ingredients. Let simmer a few minutes then pour over chicken. Bake at 325 degrees until tender. About 40 minutes, basting often. Freezes well.
