1/2 c. grated zucchini
1 egg
2 tbsp. oil
1/2 c. honey
1/2 tsp. grated lemon peel
3/4 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon

Mix ingredients. Spoon into muffin tin. Bake at 400 degrees for 20 minutes.
