PORK LOIN WITH KRAUT 
Cut slits in top of 3 to 4 pound pork loin. Add garlic buds (6 or 8) according to taste. Add pepper and salt over top and refrigerate overnight. Brown in hot oven, turn down oven and cook well, about 2 hours.

Push meat to one side, add package of sauerkraut (juice and all). Slice large onion over top. Sprinkle with two large tablespoons brown sugar. Add some caraway seeds over top and bake 1 1/2 hours longer at 350 degrees.
