TURNIP CASSEROLE 
4 c. diced cooked turnips
1/4 lb. cheese
1 1/2 c. milk
2 tbsp. flour
2 tbsp. butter
1 tsp. salt
1 c. buttered bread crumbs

Peel and cook turnips in salted water until tender; drain and dice. Prepare a sauce with the milk, flour, fat and salt. Cut the cheese into irregular bits. Put in casserole dish in alternate layers with cooked turnips, beginning with turnips, ending with cheese. Pour white sauce over all; top with buttered crumbs. Bake 20-30 minutes until crumbs are golden.
