RHUBARB CUSTARD PIE 
8" unbaked pie crust
2 eggs
2 tbsp. milk
1/2 c. sugar
3 tbsp. flour
3 tsp. nutmeg
3 c. rhubarb, chopped
2 tsp. butter

Heat oven to 400 degrees. Beat eggs slightly; add milk. Mix sugar, flour, and nutmeg; stir into egg and milk mixture. Mix in rhubarb. Pour into pastry crust. Dot with butter. Bake 50-60 minutes. Cover crust with foil if browns too quickly.
