PEACH MARMALADE | |
3 lbs. (about 12 med.) peaches 3 c. sugar 1 orange Plunge peach into boiling water to loosen skins them plunge them into cold water and gently slip off the skins. Halve and pit the peaches. Coarsely chop enough to yield 4 cups. Thinly slice the orange -- discard the seeds -- do NOT peel first. Combine the peaches, orange and sugar in a large saucepan. Stir over medium heat until the sugar is dissolved. Increase the heat and cook rapidly until clear and thick, stirring frequently. Remove from the heat and skim off the foam. Ladle into clean, hot jars and seal with a lid. Process by simmering in boiling water bath 10 minutes. |
