LEMON BLUE FISH 
2 med. bluefish (fillet)
3 bacon strips
2 stalks green onions
1 sm. yellow onion
1/2 bell pepper
1 tbsp. butter
1 1/2 lemons (fresh)

Season fish. Marinate in lemon (before cooking) use skillet pan. Fry bacon strips until crispy. Drain away most of fat. Dice bacon into bite sizes. Dice green onion with bacon, cooking slowly together in skillet. Add slices of fish fillet in skillet over onion, bacon, then add just enough water to simmer. Add 1 tablespoon butter. Then; slice yellow onion along with bell pepper and 1 1/2 fresh lemons. Simmer for 10 minutes, then thicken. Eat over rice. Serves 4.
