CHEESECAKES 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
1 tsp. vanilla
2 eggs
Vanilla wafers

Soften cream cheese by leaving out at room temperature. Add the sugar and beat until very creamy. Add the remaining ingredients and continue to mix well. Place cupcake liners in cupcake tins. Drop a vanilla wafer into each cup and fill 2/3 full with cream cheese mixture. Bake approximately 25 minutes at 375 degrees. Do not over bake. They won't appear brown and this is the way you want them.

NOTE: This recipe is better when baked an eaten almost a day later.
