LEFSE 
5 lg. potatoes
1/2 c. sweet cream
1 tsp. salt
3 tbsp. butter
Flour to roll thin

Boil potatoes, mash very fine and add cream, butter and salt. Beat until light and cool in refrigerator. Add flour. Take a small piece of dough and roll on a cloth (similar to rolling a pie crust). Roll as thin as possible. Transfer to grill and bake on grill (on high setting) until light brown on one side then turn to bake second side. When baked, place between clean cloths to keep them from become dry.

When ready to eat, spread with butter, sprinkle with sugar and roll it into a cylinder-like shape.

Yum, much better than those dried potato based recipes. I like to rice my potatoes. I prefer mine without sugar, unlike my kids, who eat it either with sugar, or sometimes in sandwich form like a burrito, but with roast, mashed potato, vegetable,and gravy type fillings! You can actually buy lefsa grills if you really get good!
