LEFSE 
4 c. mashed potatoes
2 tsp. salt
3 tbsp. butter
2 c. flour
1/2 c. cream
2 tsp. sugar
Flour to roll

Boil potatoes. Mash until very fine and fluffy or rice. Add cream, butter, salt, and sugar. Beat until light. Let cool. Add flour (1 cup flour to 2 cups potatoes). One batch should be cut into 18 pieces. Roll each piece as for pie crust, as thin as possible. Bake on lefse iron until light brown on both sides. Set grill at 450 degrees.
