LENTIL - VEGETABLE SOUP | |
1 lb. lentils 2 1/2 qt. chicken broth 1 1/2 c. diced potatoes 1 med. onion, chopped 1/2 c. sliced carrots 1 c. sliced celery 1 lb. Polish sausage Parsley Put soaked lentils in broth in a large heavy kettle. Bring to a boil, cover, reduce heat and simmer 35 minutes. Add next four ingredients and simmer 20 minutes. Add skinned and sliced sausage. Cover and heat 10 minutes; season with salt to taste. Add parsley. |
