MARSHMALLOW-PINEAPPLE WHIP 
24 marshmallows
1/2 c. crushed pineapple, drained
3/4 tbsp. lemon rind, grated
1 (10 oz.) box vanilla wafers
1/2 c. whipping cream, whipped
1/4 c. milk
1/4 c. pineapple juice
1 1/2 tbsp. lemon juice

Melt marshmallows and 1/4 cup milk over hot water. After melted, add 1/2 cup crushed pineapple, drained, 1/4 cup pineapple juice, lemon riand nd lemon juice. Set aside until cold. Add whipped cream. While it is cooling make vanilla wafer mixture.

WAFER CRUST:

1 c. vanilla wafers, crushed
3 tbsp. melted butter
3 tbsp. sugar

Mix together and pat half in bottom of 9"x13" pan. Put on marshmallow-pineapple mixture and rest of crumbs on top. Refrigerate several hours. Will freeze well.
