IT'S A SNAP CHEESECAKE 
1 env. Knox gelatin
1/2 c. sugar
1 c. boiling water
2 (8 oz) packages cream cheese, softened
1 tsp. vanilla extract
1 9-inch graham cracker crust

Mix gelatin and sugar in a bowl. Add boiling water; stir until dissolved. Beat in 2 (8 ounce) packages cream cheese and 1 teaspoon vanilla.

Pour into a graham cracker crust.
