APPLE DUMPLINGS 
1 recipe pastry for double pie
6 sm. apples, peeled and cored
1/2 c. and 1/3 c. sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. and 2 tbsp. butter, melted
1 c. water
1/3 c. firmly packed brown sugar

Roll pastry to an 18 x 12 inch rectangle. Cut in six 6 inch squares. Combine 1/2 cup sugar, cinnamon and nutmeg. Dip apples in melted butter, then in sugar mixture. Place on pastry squares. Sprinkle remaining sugar mixture in center of apples. Add a few raisins, if desired.

Moisten edges of pastry. Bring up corners to top of apple, seal. Prick with fork. Place in 13 x 9 inch pan. Bake at 450 degrees for 10 minutes. Combine water, remaining butter and brown sugar. Pour over dumplings. Reduce heat to 375 degrees for 40-45 minutes or until apples are tender. Can substitute 2 fresh peach halves for apples.
