VELVET BANANA BREAD 
5 large, ripe bananas
4 eggs
1 C shortening
2 C sugar
4 C flour
2 tsp baking soda
1 tsp salt
1 C chopped nuts

Beat bananas until are of liquid consistency. Beat the eggs and combine with bananas. Set aside.

Cream shortening and sugar together until fluffy. Add banana/egg mixture to shortening/sugar mixture and blend.

Sift together the flour, baking soda and salt and blend lightly into above mixture. Fold in chopped nuts.

Pour into 2 well greased 9 x 5 baking pans and bake at 350°FF for 45-50 minutes.
