2 c. flour 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon 1 tsp. pumpkin pie spice 1 c. oil (vegetable) 1 1/2 c. sugar 2 c. grated zucchini 4 eggs Sift together flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. Mix oil, sugar, zucchini and eggs. Add to dry ingredients. Bake in large cookie sheet (greased) for 20-25 minutes at 350 degrees or until toothpick comes out clean. Frost when cool. FROSTING: 3 oz. cream cheese 1/2 tsp. vanilla 2 c. powdered sugar 2 tbsp. butter 1-2 tsp. milk Soften butter and cream cheese in microwave on High for 30-45 seconds. Beat in sugar, milk and vanilla. |
