CHICKEN CORN SOUP | |
Cook off a whole chicken and save all of the broth. When cool, remove chicken from bones. 4 or 5 c. frozen white corn (I use my own frozen silver queen), do not use canned corn, cook corn 1 c. chopped celery, cook 1 c. fine noodles, broken, cook 2 c. chicken cut in sm. pieces Remainder of chicken can be used in another dish The proportion of all these ingredients can be changed to suit your taste. I use a lot of corn. Add all of these ingredients to heated chicken broth. I add one or two cans of Swanson clear chicken broth if needed. Lastly add 2 hard boiled eggs, chopped and salt and pepper to taste. |
