BEETS AND ORANGES 
2 tbsp. flour
2 tbsp. butter
3/4 c. orange juice
1/2 tsp. salt
3 c. sliced cooked beets
1/4 c. sugar
1 (11 oz.) can mandarin oranges, well drained

Make a roux of flour and butter. Slowly add orange juice, stirring constantly. Add salt and sugar and continue stirring until well blended and slightly thick. Add beets. Bake covered in 1 quart casserole for 15 minutes at 350 degrees. Five minutes before serving, add mandarin oranges. 5 servings.
